Smoked Salmon Baked Eggs

Needed

  • ½ TBSP butter

  • 3 TBSP heavy (double) cream

  • 2 oz / 55g chopped smoked salmon (lox)

  • Sea salt and black pepper

  • 2 tsp fresh chives, chopped

  • 2 eggs

 

Directions

  1. Grease small ramekin-type dish with butter.

  2. Put cream in the bottom of the dish.

  3. Place salmon pieces on the bottom of the dish, sprinkle with chives and season.

  4. Crack eggs carefully over the salmon.

  5. Place dish in a baking pan and pour water in the pan until it is halfway up the sides of ramekin dish.

  6. Bake for 15 minutes at 350 F until eggs are just cooked.
