Ingredients
Pesto

2 cups Fresh spinach (packed)

1 Garlic clove

1/4 cup Almonds
-
2 tbsp olive oil

Salt (to taste)
Sardines

6 Fresh sardines (cleaned)

2 tbsp Coconut oil (melted)

Salt (to taste)

Black pepper (to taste)
Instructions

Preheat the broiler. Place the top shelf about 6 inches from the broiler in your oven.

Combine all the ingredients for the pesto in a food processor. Blend until paste forms. Set aside.

Rinse the sardines and pat dry with a paper towel.

Place the sardines on a foil-lined baking sheet.

Stuff each sardine with 1 tbsp of the pesto.

Brush both sides of the sardine with coconut oil and season with salt and pepper.

Place the sardine under the broiler and cook for 4 minutes on each side, until cooked through.

Remove from the oven and serve.
