Ingredients

Pesto

  • 2 cups Fresh spinach (packed)

  • 1 Garlic clove

  • 1/4 cup Almonds

  • 2 tbsp olive oil

  • Salt (to taste)

 

Sardines

  • 6 Fresh sardines (cleaned)

  • 2 tbsp Coconut oil (melted)

  • Salt (to taste)

  • Black pepper (to taste)

 

Instructions

  • Preheat the broiler. Place the top shelf about 6 inches from the broiler in your oven.

  • Combine all the ingredients for the pesto in a food processor. Blend until paste forms. Set aside.

  • Rinse the sardines and pat dry with a paper towel.

  • Place the sardines on a foil-lined baking sheet.

  • Stuff each sardine with 1 tbsp of the pesto.

  • Brush both sides of the sardine with coconut oil and season with salt and pepper.

  • Place the sardine under the broiler and cook for 4 minutes on each side, until cooked through.

  • Remove from the oven and serve.
