Apricot Baked Apples

8 Rome apples, cored (or another baking apple)
3/4 cup apricot preserves
1/2 cup raisins
1/4 teaspoon ground ginger
1/4 teaspoon ground coriander
1 teaspoon ground cinnamon

 

Preheat oven to 375 F.

 

Mix apricot preserves with next 4 ingredients. Spoon apricot mixture into apples.

 

Place apples in baking dish. Add 1/2 inch of water.

 

Bake at 375 F for 45 - 60 minutes, basting frequently.

 

Serve hot.
